Sault is now open Thursday nights for dinner.

We welcome our new head chef Cindy Crozier.

Cindy hails originally from Kyneton and has garnered her skills from such wonderful establishments as Midsummer House in the Uk and Aria in Sydney.

She has designed a new Winter menu to warm your palettes.

With Winter on our doorstep it is a great time to come in and sit by the roaring fire and enjoy a glass of wine or enjoy a meal overlooking the lake as the winter sun sparkels and the leaves change to gold.

For a tasty example of the new menu why not try the Pan roasted scallops on cauliflower puree with Istra chorizo and petit herb salad followed by the crispy skinned free range duck breast, on herbed lentils wiht sweet potato puree, wilted spinach and Tokay sauce and to complete the night, the Kennedy & Wilson chocolate and mocha tart, cardamon ice cream and vanilla tuille

Directions to Sault

From Melbourne CBD, travel over the Westgate Bridge, taking the Western Ring Road to the Western Highway exit - following the signs to Ballarat. You will travel for around an hour on the Western Highway passing the Ballan turnoff and the BP service centre before reaching the Ballan/Daylesford turnoff. Turn right toward Daylesford and travel for around 25 kilometres to find us on your left. Another 5km and you reach Daylesford.

Alternatively take the Calder Highway to Woodend, turn left and follow the signs to Daylesford. You will enter Daylesford from the far end and need to turn left at the main street roundabout at the intersection of Albert and Vincent Streets. Travel through Daylesford and the top end roundabout with the Post Office on the corner and head out of town over the Main Lake bridge. About 4km down the road you will travel past the Sailors Falls sign and around the next bend you will find us on the right.
